Corn Baked Rolls
- Sweet Corn (boiled) 1 cup
- Bread 12 slices
- Potato (boiled & mashed) 1 large
- Green chilies chopped 2
- Ginger paste 1 tsp
- coriander chopped ¼ cup
- Lemon juice 1 tsp
- Salt to taste
- Oil 2 tbsp
- Onion chopped 1 large
Method:
Preheat oven to 180 ºC. Coarsely crush boiled sweet corn in a blender.Transfer into a bowl. Add potato, green chilies, ginger paste,coriander leaves, lemon juice and salt and mix well. Heat oil in a pan and sauté onion till light brown. Add this to the corn mixture. Mix well, divide into twelve equal parts and shape them into oval rolls and set aside. Remove the crusty sides of bread slices and soak them in water for ten seconds. Squeeze out excess water by gently pressing between your palms. Place the potato corn roll on one end of a slice and roll the rest over to cover the stuffing firmly. Similarly make rest of the rolls. Place all the rolls on a baking tray. Bake in the preheated oven for approximately twelve minutes or till the rolls turn light brown in color. Serve hot with tomato ketchup or green chutney.
Chicken Steaks (Eng)
Ingredients:
- Chicken breast fillet (boneless) 2
- Salt ½ tsp
- Black pepper powder ½ tsp
- Red chili crushed ¼ tsp
- Soy sauce 1 tbsp
- Ketchup 1 tbsp
- Chili sauce 1 tbsp
- Vinegar ½ tsp
- Garlic chopped 1 tsp heaped
- Oil 2-3 tbsp
- Ingredients for Sautéed Vegetables
- Carrot 1 blanched
- Potato boiled 1 large
- Peas boiled ½ cup
- Salt a pinch
- White pepper a pinch
- Soya sauce ½ tsp
- Butter 1 tbsp
- Ingredients for White Sauce:
- Butter 2 tbsp
- Flour 1 tbsp
- Milk ½ cup
- Mustard paste ¼ tsp
- Salt a pinch
- Black pepper crushed ¼ tsp
- Cheese slices as required
- Oregano leaves, to sprinkle
Mix the chicken with all the ingredients mentioned above, except oil.
Let it marinade for 2-3 hours. Heat oil in a frying or grill pan. Fry the marinated chicken for 3-4 minutes both side until it's cooked through.
Method for Sautéed Vegetables
Sauté the boiled vegetables in butter on high flame. Add the salt, white pepper and soya sauce. Stir for a minute.
Method for White Sauce :
In a saucepan over low heat, melt butter, add flour and other seasoning, stir well with wire whisk. Gradually add milk, whisk constantly. Cook for 2-3 minutes until sauce begins to thicken. Pour the white sauce over cooked steaks, put cheese slice and sprinkle oregano leaves on top. Serve with sautéed vegetables on the side.
Simple Vegetable Curry
Ingredients:
- Sweet potato 1 (peeled and cut into 1 inch pieces)
- Small cauliflower (cut into florets)
- Yellow onion medium 1 (diced)
- Chickpeas 1 can (rinsed and drained)
- Vegetable oil 1 tbsp
- Brown mustard seeds 2 tsp
- Long-grain white rice 1 cup
- Coarse salt and ground pepper
- Red curry paste 1 tbsp
- Unsweetened coconut milk 1 cup
- Fresh coriander (for serving)
In a medium saucepan, heat 1 teaspoon oil over medium-high. Add mustard seeds and half the onion and cook, stirring often, until onion is soft, for 3 minutes. Add rice and stir to combine. Add 11/2 cups water, season with salt and pepper, and bring to a boil. Cover and reduce to a simmer; cook until water is absorbed and rice is tender, for about 15 minutes. Remove from heat and let stand for 5 minutes. Fluff with a fork before serving. Meanwhile, in a large oven or heavy pot, heat 2 teaspoons oil over medium-high. Add remaining onion and cook, stirring often, until soft, for 3 minutes. Add curry paste and stir until fragrant, for about 1 minute. Stir in coconut milk and 1 cup water and bring to a boil. Add sweet potato and cauliflower and season with salt and pepper. Reduce heat to medium, cover, and simmer until vegetables are tender, for 10 to 15 minutes. Stir chickpeas into curry and increase heat to high. Simmer rapidly until liquid reduces slightly, for 2 minutes. Serve curry over rice with coriander.
Singaporean Garlic Rice
Ingredients:
Heat the oil and butter in a wok and fry the chopped carrots for 1-2 minutes.
Add in the beaten egg, scramble until cooked.
Stir in rice and add salt and sugar to taste.
Combine in the fried chopped carrots.
Fry until all the Ingredients are well combined.
Add in the fried garlic crisps and add a dash of ground black pepper to taste.
- Cooked rice, cooled 2 cups
- Carrots, finely chopped 2 tbsp
- Spring onions, chopped 2 tbsp
- Eggs lightly beaten 2
- Oil 1 tbsp
- Butter 1 tsp
- Fried crispy garlic chips 2 tbsp
- Soya sauce 2 tbsp
- Salt to taste
- Sugar to taste
- Black pepper ground a pinch

Ingredients:
In a large pan cook the beef mince, sausage, pepperoni, capsicum, garlic, onion, carrot. Cook until beef is no longer pink. Drain into a large colander to drain extra grease.
In another pan, add the mushrooms, tomato ketchup, tomatoes, tomato paste, beef stock cube, bay leaves, thyme, oregano, basil, crushed red pepper, black pepper, sugar and stir well. Pour the meat mixture into the pan. Bring to a boil, reduce heat and cover and simmer for 30 minutes.
